“Sawan Special: Eggless Omelette in Rich Indian Gravy
Our guests are chanting “Bholenath” and for me it’s “Time to cook some veg food!!” I have some Himachali friends over in Sawan, and they asked me to cook a veg-only meal.
“No problem, no problem, got it!” And that’s when I came up with an eggless omelette that would put even the most die-hard devotees of Lord Shiva into a happy smile.
I prepared a veg omelette with besan chopped green chillies, tomatoes, and onions, and then served it in a rich gravy consisting of potatoes, onions, and a mix of spices. The outcome was magic, pure and simple!
My guests were going ga-ga over it, and I was thinking, “Told you, I’d a culinary wizard!”
Recipe: Eggless Omelette in Rich Indian Gravy
Eggless Omelette
Ingredients:
– 1 cup besan (gram flour)
– 2 tbsp curd
– ½ cup water (adjust according to consistency)
– Turmeric, pepper, salt according to taste
– 1 chopped onion
– 1 chopped tomato
– 1 green chilli (optional but spicy)
– Fresh coriander leaves
Instructions:
1. Combine besan, curd, water, and spices together to a smooth batter.
2. Mix in chopped veggies and allow it to rest for 10 mins.
3. Ladle fulls onto a hot pan like a dosa. Cook both sides until golden.
4. Cut into large pieces and keep aside.
Rich Gravy:
Ingredients:
– 2 medium potatoes, chopped
– 1 onion, chopped
– 1 tomato, chopped
– 1 tsp ginger garlic paste
– Turmeric, red chilli, coriander, cumin powder
– Salt to taste
– Fresh coriander for garnish
Method:
1. Lightly fry potatoes in minimum oil.
2. Add onions, sauté until golden.
3. Add tomato and ginger garlic paste. Cook until mushy.
4. Add spices and water to prepare a rich gravy.
5. Add chopped omelette pieces, simmer for 5–7 mins.
6. Sprinkle with coriander and serve hot with phulkas or rice.
Your guests will be impressed, whether chanting “Bholenath” or just seeking a great meal! You can have the omelette as a snack too with your chai!!!
