Sri Lankan Banana Blossom Salad Recipe
Ingredients:
– 2 small banana blossoms, julienned very finely
– 1 cup shredded poached chicken breast (or tofu/ shrimp)
– 1/4 cup crushed roasted peanuts
– 2 tbsp white vinegar
– 1 tsp fresh lime juice
– 2 tbsp chili fish sauce
– 1/8 tsp freshly ground black pepper
– 1/4 tsp salt
– Chopped fresh coriander
Instructions:
1. Prepare the banana blossoms: Julienne the banana blossoms and soak them in salt and soda water to avoid browning. Blanch them in boiling water for 30-45 seconds and then put them in an ice bath to keep them crisp.
2. Prepare the dressing: Whisk together white vinegar, sugar, salt, coconut milk to make a white vinaigrette. Chill until required.
3. Build the salad: Toss together the blanched banana blossoms, poached chicken, roasted peanuts, chopped coriander, and chili fish sauce. Dress with the white vinaigrette and toss lightly.
4. Serve: Garnish with additional chopped coriander leaves peanuts, and a sprinkle of salt. Savour your tasty Sri Lankan-style banana blossom salad!
